Soy food and beverage products are made out of soybean. Soybeans have high protein, amino acid, and fiber content with complete absence of cholesterol, and hence are substitute for meat products, and are best suited for vegan diets. Soy has a number of health benefits such as increasing bone density, reduces the risk of heart failure, increasing the hair growth, and others. The major producers in the soy market are India, US, Brazil, China, and Argentina. Out of all the soybeans processed 80% are processed for soybean oil and soybean meal, and 95% of soybean meals are converted in to animal feed. The soy market contributes 70 to 80 million tonnes of the global trade. Globally demand for soy food is being driven growing health awareness among individuals and lower price of soy food as compared to milks products. Absence of calcium is a key challenge for the soy food. Soy food has artificial calcium added to them; however it is comparatively of less nutrient value.
