Beef fat comes from organ meats, particularly the kidney region. Tallow is a rendered beef fat with a long shelf life that is extracted from the tough, soap-like fat that surrounds beef cuts, including steak, brisket, roasts, and ribs. Tallow was first mentioned in the 15th century. This extracted cow fat served as the main oleo ingredient for roasting, baking, making candles, and even making soap. Any kind of beef fat, however, can be converted and transformed into tallow. Despite not being a particularly popular component now, beef fat was previously used to make pemmican, a Native American staple comprised of cattle tallow, dried meat, and dried fruit.
